Ingredients:

  • 2 large sweet potatoes (peeled and cubed)
  • 1 cup lentils (rinsed)
  • 1 onion (chopped)
  • 3 garlic cloves (minced)
  • 1 carrot (chopped)
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 4 cups vegetable broth
  • Salt and pepper to taste

Directions:

  1. In a large pot, sauté the onion and garlic until fragrant.
  2. Add turmeric, cumin, sweet potatoes, lentils, carrots, and vegetable broth.
  3. Bring to a boil, then reduce the heat and simmer for about 30 minutes or until sweet potatoes are tender.
  4. Season with salt and pepper, and enjoy!
