Ingredients:

  • 1/2 head of cabbage (shredded)
  • 2 cups kale (chopped)
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Directions:

  1. In a large pot, heat olive oil and sauté onion and garlic until softened.
  2. Add cabbage, kale, and vegetable broth.
  3. Bring to a simmer for 20 minutes until the vegetables are tender.
  4. Season with salt and pepper and enjoy!
